Salt Wind Catering cooks authentic Spanish paella live on a 1-metre pan at your event in Cornwall. Bomba rice — the proper short-grain that holds its bite — generous saffron, and a sofrito built from scratch on the pan in front of your guests. Seafood, chicken & chorizo, mixed (mar y montaña), or full vegetarian — agreed at quote stage, cooked on the day.

We bring the pan, the gas, the gazebo and the cook team. All we need from your venue is a flat 3m × 6m space. The pan does up to 200 portions in a single sitting and is as much of a centrepiece as the food itself — guests gather to watch it come together, and that becomes part of the event.

Seafood Paella

Chicken & Chorizo Paella

The reliable crowd-pleaser — slow-cooked chicken thigh, Cornish chorizo, peppers, peas, Bomba rice. Bigger flavours, lower per-head. Side salad included.

Mar y Montaña (Mixed)

Chicken, chorizo, prawns and mussels in the same pan — the traditional sea-and-mountain. Our most-booked paella for weddings and parties.

Prices are entry rates and gross (no VAT to add). Orders over £1,500 include free travel; below that a mileage supplement may apply from Redruth — confirmed in writing before you commit.

How the day runs

  1. Arrival. We arrive 2–3 hours before service to set up the pan, the gazebo and the serving station — out of guests' way until you want the show to start.
  2. Sofrito. Onion, garlic, peppers, tomato cooked down on the pan as the first guests gather. The smell does half the work.
  3. Rice & stock. Bomba rice goes in, the saffron stock follows, and the pan is left to do its work — the cook team turn and tend, never stir.
  4. Protein & finish. Chicken, chorizo, seafood added in order, and the pan rests for the socarrat — the crisp bottom layer that signals it's done.
  5. Service. Plated from the pan to your guests. Vegetarian portions kept separate. Salads and bread on the serving table.
  6. Pack-down. We pack down our equipment and leave the space as we found it.

How much does paella catering cost per head in Cornwall?
Paella catering starts from £10.95pp on the 1-metre pan, including the cook team, the pan, the gas and the gazebo. Final per-head depends on guest numbers, choice of paella (seafood is dearer than chicken & chorizo), and whether you add tapas, salads or a Spanish dessert. We send a fixed quote within one working day.
What kind of paella do you cook?
Authentic Spanish paella — Bomba rice (proper short-grain), generous saffron, sofrito built from scratch on the pan. Choose seafood (prawns, mussels, squid, white fish), chicken & chorizo, mixed (the classic mar y montaña), or a full vegetarian pan with peppers, artichokes and butterbeans. We agree the menu before the day.
How many people can the paella pan serve?
The 1-metre pan does up to 200 portions in a single sitting. For smaller events from 30 guests, we still bring the same kit — the pan is the show. For 200+ we run two pans in rotation or pre-prep a second batch alongside.
Can you cook paella indoors at our venue?
Outdoors is the default — the pan needs space and ventilation. Indoor or under-cover cooking is possible at venues with proper extraction (marquees with open sides count). We check site feasibility at quote stage and will tell you straight if a venue is workable.
What do you need from the venue?
A flat 3m × 6m space for the pan, gazebo and serving station. We bring our own gas, our own water, our own everything. A 13-amp socket within reach is helpful but not essential. We never ask for a kitchen.
Can you cater for vegetarians and dietary requirements?
Yes — every paella booking includes a vegetarian option, and we can run a separate vegan pan if numbers justify it. Gluten-free is straightforward (rice-based dish). Our kitchen handles gluten and nuts, so for severe allergies we will be honest about what we can and cannot guarantee.
