The Cornish Christmas Hog Roast Feast, Explained

Most people picture a hog roast in July, in a field, with a cider in hand. So the idea of one in December takes a second to land. But a whole Cornish pig, slow-cooked over real charcoal while the light goes early and everyone stands around the heat, is about as Christmas as food gets. It is the oldest kind of feast there is.

Here is what it actually involves, so you can decide whether it is right for your December.

What happens on the day

Our cook team arrives hours before you eat. The pig goes on early — slow-roasted Cornish pork, cooked over charcoal, not rushed. That long cook is the whole point: it is what gives you crackling that shatters and meat that pulls apart without a knife.

We bring the cooking setup with us, including a 3m x 6m gazebo, so the weather is our problem rather than yours. Cornwall in December does what it likes. The cook team works through it.

When it is time, we carve and serve from the hog. Your guests come up to us, plates in hand, and help themselves to the sides. Then we pack down our equipment and go. The cook team is included — there are no serving staff standing behind your guests, and there is no plating. It is a proper feast, and feasts are self-serve. That is not a compromise; it is the format working as intended.

What is on the table

The Essential Hog Roast is the honest version: slow-roasted Cornish pork with crackling, fresh bakery rolls, homemade apple sauce, sage and onion stuffing. For most Christmas gatherings that, with a couple of sides, is genuinely enough.

Go up through the range and it grows. The Signature Cornish Hog Roast Feast adds slow-roasted beef brisket alongside the pork, with apple sauce and horseradish. If you would rather lamb, the Cornish Lamb Spit Roast runs local lamb with mint sauce and a rosemary and garlic gravy. There is a beef option on nearly every tier, because at Christmas there is always someone who does not want pork.

Add-ons are where a Christmas hog roast turns into a night. The Extra Sides Add-On brings corn on the cob, mac and cheese, loaded nachos and dirty fries — and it only works on-site, alongside the hog, not delivered. The Sweet Smoke Dessert Add-On does brownies, fruit skewers and Cornish clotted cream ice cream. If your party is going late, The Late Night Smokehouse puts pulled pork buns and dirty fries out towards the end of the evening, which is the single best thing you can do for a room three hours into a Christmas party.

Who it suits

Hog roast rewards numbers. It is built for a room of fifty or more, and it is at its best when people are standing, moving and talking rather than seated in rows. Office Christmas parties, big family gatherings, farm and barn events, end-of-year staff thank-yous.

It suits people who want the food to be the event rather than the background to it. A carved hog in the middle of a December evening pulls a party together in a way a tray of sandwiches never will.

What it does not suit is a formal, seated, plated Christmas dinner. If that is what you want, say so and we will point you at the right format instead. We would rather tell you that now than have you find out in December.

Vegetarians and vegans

They are not an afterthought. The vegetarian and vegan mains are cooked as dishes in their own right and run alongside the carved meat, not as a token gesture. Everything is labelled on the line so nobody has to interrogate a table to work out what they can eat.

December hog roasts get claimed early, and the cook team can only be in one place at a time. Christmas ordering closes on 15 December 2026, but the good dates go long before that.
