Most published catering benchmarks come from London-weighted trade surveys. None of them tell a Cornwall event planner what to actually expect when they send an enquiry to a regional caterer in May. This benchmark fills that gap.

It is built from one source: Salt Wind Catering's own enquiry log between 2024 and 2026. The dataset is real, the methodology is documented at the foot of the post, and every number is published as a band rather than a false-precision point estimate.

Headline finding

First-reply time on a Cornwall catering enquiry sits inside one business hour during working days, and inside the next business day across weekends and bank holidays. Wake enquiries are answered fastest — typically inside thirty minutes during working hours. Wedding enquiries take the longest lead time by a wide margin, with confirmed weddings booked six to twelve months out.

Short-notice work — enquiries arriving inside seven days of the event date — makes up a meaningful slice of summer volume and is most heavily concentrated in wakes, corporate buffets, and last-minute film and TV welfare bookings.

Why publish a benchmark at all

Cornwall event planners — parish hall committees, film production coordinators, site managers, families arranging a wake — work blind on response-time expectations. There is no regional figure to point at. The national hospitality bodies publish aggregate UK figures that overweight metropolitan caterers and underweight rural operators.

Methodology

Source data: Salt Wind Catering's enquiry inbox, quote pipeline and booking confirmation records between January 2024 and May 2026. Approximate sample: several hundred enquiries across the full window. The dataset is not large enough to publish two-decimal precision and we have not tried to. Every figure below is a band, not a point.

What is measured: time from enquiry receipt to first substantive reply, time from enquiry to booking confirmation, distribution of enquiries by event type, distribution by month, and proportion of enquiries arriving inside the seven-day short-notice window.

What is not measured: enquiries that arrived by phone outside business hours and were handled the same day without an email trail. Walk-in conversations at events. Repeat customers booking informally. These are excluded because they cannot be timestamped cleanly.

Anonymisation: no customer names, postcodes, event addresses, contact details or per-event detail appear in the published figures. The dataset is aggregated by event type and month only.

Limitations: this is the operational data of one regional caterer. It is not representative of all Cornish caterers and should not be cited as a sector-wide average. It is a single-operator benchmark, useful for planners and journalists as a directional indicator.

Response time by event type

For weekday enquiries arriving in working hours, first-reply time across all event types sits inside one business hour for the large majority of cases. Weekend and bank holiday enquiries are typically answered on the next working day.

Wake enquiries are prioritised and tend to be answered fastest of all categories — typically inside thirty minutes during working hours, reflecting the time-sensitive nature of the booking. Wedding enquiries receive a same-business-hour acknowledgement, but the full quote-and-menu reply lands within one business day, since wedding quotes require more menu detail than a buffet or BBQ.

Booking lead time by event type

The variance between event types here is the most useful figure in the dataset for planners. Wakes sit at the short end, typically booked one to three days ahead, occasionally same-day. Weddings sit at the long end, with the bulk of confirmed weddings booked six to twelve months ahead.

Wake: 1 to 3 days, occasionally same-day. Corporate buffet and working lunch: 1 to 4 weeks. Birthday, christening, small celebration: 4 to 8 weeks. BBQ, hog roast, garden party: 2 to 4 months. Holiday-let and self-catered group: 2 to 8 weeks. Film and TV welfare: bimodal — 8 to 12 weeks for scheduled productions, or 1 to 3 days for last-minute crew mobilisation. Wedding: 6 to 12 months for the bulk of confirmed bookings.

Peak versus off-season variance

Enquiry volume is heavily seasonal. Volume rises through spring, peaks across the May to September window, and tails off into autumn before a smaller December festive uplift. Inside the peak window, response times stretch slightly on the busiest weeks but remain inside the next-business-day band.
