Who pays — the three models we see

Owner-absorbed is rare and tends to be reserved for VIP repeat guests or premium-tier lets where the BBQ is bundled into the stay price. The owner pays the invoice on account, the guest sees a welcome card on arrival.

Guest-direct is the most common — the owner refers the guest, we quote the guest, the guest pays. The owner gets a small referral arrangement or just the goodwill of having solved the problem.

Split-billing works for group bookings — the owner covers the on-site cook fee and travel as a venue cost, the guest covers food per head. This is how stag groups, hen weekends, and corporate retreats usually run at a let.

We ask for 7 days notice in peak season — July, August, school half-terms, bank holidays. Mid-week shoulder-season requests we can often turn around in 48 to 72 hours. The genuine same-day cottage BBQ is rare and almost never works in August because the cook team and the grills are already committed.

We do not run a wedding-style banqueting menu at a let — that is not what guests want from a Tuesday-night BBQ in a cottage garden.

We also do not provide drinks, crockery, glassware or front-of-house waiting staff. The food arrives, or the cook team arrives and cooks. The cottage handles plates and a fridge for drinks.
