Honesty up front: Salt Wind Catering is a cook team, not a front-of-house service. We don't bring waiters. We don't bring china plates. Within that scope, the plating standards we can deliver are: individual cold lunches plated on quality compostable boards, hot lunches sealed in individual portions for table service, or tight sharing platters with proper garnish and presentation. The plating is for what it is — a working lunch — done well.

Dietary Precision

Board lunches usually have a confirmed list — eight people, three of them with specifics. Vegetarian, gluten-free, pescatarian, no shellfish. Those go on the booking record and stay there. Each individual portion is labelled or plated separately so there's no asking around the table during a sensitive discussion.

For nut allergies or coeliac we're straight: our Redruth kitchen handles both nuts and gluten. We minimise cross-contact carefully but can't claim a 100% trace-free guarantee. Most board members with severe allergies prefer to know that than be told otherwise. Allergen info is available on request as standard.

Weekly Retainer Concept

If you run a regular leadership lunch — every Tuesday for the SLT, every other Wednesday for the partners, monthly senior team — a retainer setup is the path of least resistance. We agree a rotating menu (say four weeks repeating, or seasonal cycling), lock in the dietary profiles, and run it. One short confirmation email each week with the headcount.

Typical Menus

Cold board lunch: individually plated poached salmon or roast chicken with seasonal salads, dressed leaves, focaccia or sourdough, a small tart or seasonal fruit dessert. Drops chilled, lifts straight onto the table. Hot board lunch: braised lamb shoulder, slow beef cheek, or a proper vegetarian centrepiece served with grains or potatoes and two sides, sealed individually for table service.
