Sand sole is a true sole, a slim flatfish with a sandy, freckled upper side that lives on soft sea beds in shallow water. It is landed in small numbers by Cornish boats, so it is less familiar than its relative the Dover sole.
The flesh is firm and white with a sweet, savoury flavour, and it comes away from the bone cleanly once cooked. Cooks choose it as a good-value alternative to Dover sole that suits the same simple treatments, especially whole on the grill with butter.

How much to buy
One 300-400g whole fish per person.
Season
Best eaten from April to December, when it is landed in Cornwall.
Storage and freezing
Keep covered in the coldest part of the fridge at 0-4°C and cook within 1-2 days.
Freeze whole fish on the day of delivery, tightly wrapped, and thaw in the fridge overnight.
Chef's tip
Score the skin lightly on both sides before grilling so the heat reaches the thickest part along the backbone.
