Gilt-head bream is a silvery, deep-bodied fish named for the gold band between its eyes. This one is farmed, and farmed bream is widely raised in the Mediterranean, which keeps it in steady supply.

The flesh is white, sweet and moist, with a firm flake, and a single fish makes a neat portion for one. Bream is a favourite for cooking whole, because the skin crisps well and the bones lift out easily once it is cooked.

How much to buy

One 350-450g whole fish per person.

Season

As a farmed fish it is available all year round.

Storage and freezing

Keep covered at the bottom of the fridge (0-5C) and cook within 1-2 days of delivery.

Freezes well whole or as fillets, tightly wrapped, for up to 3 months; thaw overnight in the fridge.

Chef's tip

Slash the skin two or three times on each side and push herbs and lemon into the cuts so the flavour reaches the flesh.
