Halibut is the largest of the flatfish, with a dark olive upper side and a white underside. Ours is farmed halibut, sold as boneless portions cut from large fish.
The flesh is bright white, firm and lean, with a clean, mild and slightly sweet taste. Because it is so lean it suits gentle cooking and rich sauces, and the thick, even portions make it an easy, smart choice for dinner parties.

One 150-180g portion per person.
Season
Farmed, so available all year round.
Storage and freezing
Keep covered in the coldest part of the fridge at 0-4°C and cook within 1-2 days.
Portions freeze well, tightly wrapped; thaw in the fridge and pat dry before cooking.
Chef's tip
Halibut is lean, so take it off the heat as soon as the centre turns opaque and let it rest a minute.
