Dover sole is an oval flatfish that lives on sandy and muddy seabeds, lying flat with both eyes on its upper side. Its dark brown top skin is tough and is usually peeled away before or after cooking, leaving neat, pale fillets that come cleanly off the bone. Wild sole is landed by Cornish boats working the waters off the north and south coasts.

The flesh is firm and meaty for a flatfish, with a mild, sweet and slightly savoury flavour that holds its own with simple butter sauces. It keeps its shape well in the pan, which is why it is a classic choice for cooking on the bone and serving whole.

Season

The Cornwall Good Seafood Guide marks sole as best from May through to January, steering clear of the February to April spawning period.

Storage and freezing

Keep covered in the coldest part of the fridge at 0-4°C and cook within 1 to 2 days of delivery.

Freezes well for up to 3 months if wrapped tightly; thaw slowly in the fridge overnight before cooking.

Chef's tip

Cook it on the bone and peel the dark skin off afterwards: the flesh stays juicier and lifts off the frame in clean fillets.
