Hake is a long, slender member of the cod family with silvery grey skin and a large mouth lined with sharp teeth. Wild hake is landed by Cornish boats and is one of the most important fish for the Newlyn fleet.
The flesh is white and soft with a fine, moist flake and a mild, clean flavour. It is more delicate than cod, so it suits gentle cooking and pairs well with Spanish-style flavours. Portions are skinned or skin-on fillets cut to an even thickness, so they cook through at the same rate.

How much to buy
150-180g of fillet or one portion per person.
Your size and preparation
Small: a whole fish of about 2kg to 2.5kg, giving about 900g to 1.1kg filleted, serves 5 to 6. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.
- Whole, gutted and scaled: about 1.8kg to 2.3kg
- Filleted, skin on: about 900g to 1.1kg
- Filleted and pin-boned, skin on: about 840g to 1.1kg
- Cut into steaks: about 1.4kg to 1.8kg
Season
The Cornwall Good Seafood Guide marks hake as best from April through to January, avoiding the February and March spawning peak.
Storage and freezing
Keep covered in the fridge at 0-4°C and cook within 1 to 2 days.
Freezes well for up to 3 months; thaw slowly in the fridge and pat dry so the soft flesh does not go watery.
Chef's tip
Lightly salt the fillets 10 minutes before cooking to firm up the soft flesh, then pat dry before it goes in the pan.
