John Dory is an unusual looking fish: tall, very thin from side to side, with long spiny fins and a dark spot on each flank. It hunts small fish in coastal waters and is landed by Cornish boats, often as a welcome part of a mixed catch.
The flesh is firm, white and sweet, coming away from the frame in three neat fillets on each side. A whole fish has a low yield, but the eating quality is why chefs prize it, and it takes well to both plain and rich cooking.

Season
Recommended from April to December, also available in January, and best avoided in February and March.
Storage and freezing
Keep covered at the bottom of the fridge (0-5C) and cook within 1-2 days of delivery.
Fillets freeze well if wrapped tightly on the day they arrive; use within 3 months and thaw overnight in the fridge.
Chef's tip
Mind the sharp spines when handling a whole fish; trim them with scissors before cooking.
