Smoked mackerel is made from mackerel, a sleek, oily fish with blue-green tiger stripes that swims in shoals around the Cornish coast. The fillets are hot-smoked, so they are fully cooked and ready to eat straight from the pack. The peppered version comes coated in cracked black pepper.

The flesh is rich, moist and smoky, flaking easily with a fork. It is a handy fridge standby: eat it cold with salad, warm it through or blend it into a pâté in a few minutes.

How much to buy

One fillet (about 100g) per person as a main, half a fillet as a starter.

Season

Smoked mackerel is made from mackerel, which the Cornwall Good Seafood Guide marks as best from July through to March.

Storage and freezing

Keep sealed in the fridge at 0-4°C, follow the use-by date, and eat within 2 days once opened.

Freezes well for up to 2 months in its sealed pack; thaw in the fridge.

Chef's tip

Peel away the skin and flake the fish off it with a fork, then check for any pin bones before using.
