Octopus is a soft-bodied mollusc with eight sucker-lined arms, living among rocks and on the seabed where it hunts crabs and shellfish. Wild octopus is landed by Cornish boats, with numbers rising and falling sharply from year to year.
Cooked well, the meat is tender with a pleasant bite and a mild, sweet, slightly briny flavour. It needs slow, gentle cooking first to soften it, after which it can be finished on a hot grill or barbecue for a smoky, charred edge.

How much to buy
250-300g of raw octopus per person, as it shrinks a lot when cooked.
Season
The Cornwall Good Seafood Guide marks octopus as best from May to February, noting that numbers vary greatly from year to year.
Storage and freezing
Keep covered in the fridge at 0-4°C and cook within 1 to 2 days.
Freezes very well for up to 3 months, and freezing helps to tenderise the flesh; thaw in the fridge before cooking.
Chef's tip
Simmer it gently in barely bubbling water for 45 to 90 minutes until a knife slides into the thickest part easily, then grill to finish.
