Squid is a ten-armed mollusc with a long tube-shaped body and a pair of fins, hunting in shoals in coastal and open water. Fresh squid comes whole or line caught from Cornish boats, and the frozen tubes are cleaned and ready to cut.
The flesh is white and lean with a mild, sweet, sea-fresh flavour. Cooked quickly it is tender, and cooked long and slow it softens again, so it suits both a flash in a hot pan and a gentle braise.

How much to buy
150-200g of cleaned squid per person.
Season
Most readily available from July through to January, with variable supply in other months.
Storage and freezing
Keep fresh squid covered in the coldest part of the fridge at 0-4°C and cook within 1-2 days; keep frozen tubes frozen until needed.
Fresh squid freezes well once cleaned; frozen tubes should be thawed in the fridge and not refrozen.
Chef's tip
Either cook squid for under two minutes or for over 45 minutes: anything in between makes it rubbery.
