Spider crab is a large crab with long, spindly legs and a rounded, spiny shell, potted off the Cornish coast, where it is also sold as Cornish king crab. Much of the catch has traditionally gone to Spain.
The white meat in the legs and body is sweet and delicate, with a finer, lighter taste than brown crab. Picking a spider crab takes time, which is part of the appeal: it makes a sociable centrepiece and gives generous meat for salads, pasta and crab cakes.

How much to buy
One whole spider crab per person, or 100-150g of picked meat per person.
Season
Best eaten from March to December.
Storage and freezing
Keep covered in the coldest part of the fridge at 0-4°C and eat within 1-2 days; picked meat within 1 day.
Picked meat freezes well in a sealed tub; thaw in the fridge and use within a day.
Chef's tip
Use the handle of a teaspoon or a lobster pick to reach the meat in the long legs, and crack the shell with the back of a heavy knife.
