Mackerel is a sleek, streamlined fish with a blue-green back marked with dark wavy stripes and a bright silver belly. It moves in shoals through the waters around Cornwall, and line-caught fish are landed by small boats that handle them one at a time.

The flesh is rich and oily, with a full flavour and a soft, moist flake. It is quick to cook, good value and one of the oily fish most people already know, which makes it an easy choice for grilling and barbecues.

How much to buy

One whole fish (300-400g) or two fillets per person.

Season

Available all year round and at its best in summer.

Storage and freezing

Keep covered at the bottom of the fridge (0-5C) and cook within 24 hours, as oily fish is best eaten very fresh.

Can be frozen on the day it arrives, well wrapped, but eat within 2 months as oily fish loses quality faster in the freezer.

Chef's tip

Cook it skin side down over high heat for most of the time; the skin crisps and the oily flesh stays moist.
