Mussels are shellfish with glossy blue-black shells that grow attached to ropes or rocks, filtering their food from the water. Ours come from the Fowey river in Cornwall, one of several Cornish sites where mussels are grown.
Inside the shell the meat is plump and orange or cream in colour, with a sweet, briny taste of the sea. They cook in a few minutes in a covered pan, releasing a well-flavoured juice that becomes the base of the sauce.

500g of mussels in the shell per person as a main, 250g as a starter.

The Cornwall Good Seafood Guide marks mussels as good to eat in every month of the year.
Storage and freezing
Store live in a bowl in the fridge covered with a damp cloth, never in water or a sealed bag, and cook within 1 to 2 days.
Do not freeze live mussels; cooked mussel meat can be frozen for up to 2 months.
Chef's tip
Throw away any mussels that stay open when tapped before cooking, and any that stay shut after cooking.
