Salted fish roe, sold in small jars and ready to eat: keta (salmon) roe with large, bright orange pearls; trout roe with smaller golden pearls; black or red lumpfish roe; Avruga, a smoky herring roe; and anchovy pearls.
Each adds a bright, salty pop to a plate. They are the finishing touch for blinis, eggs and fish starters, and an easy gift or party piece.

How much to buy
10-20g per person as a garnish, or 30g on blinis.
Storage and freezing
Keep in the fridge at 0-4°C and eat by the date on the jar; once opened, keep sealed and eat within 2-3 days.
Do not freeze: the pearls burst when thawed.
Chef's tip
Serve from a glass, bone or plastic spoon; a metal spoon can taint the flavour.
