Brill is a broad, oval flatfish and a close relative of turbot. Its dark upper side is smooth and speckled, without the bony bumps turbot carries, and it lives on sandy and gravel ground in the waters around the south-west, where Cornish boats land it.

The flesh is white, sweet and delicate, with a fine flake that holds together well when cooked on the bone. Cooks often pick brill when they want the eating quality of turbot at a gentler price, and it suits both simple treatments and richer sauces.

How much to buy

About 350-450g of whole fish per person, or 150-180g of fillet.

Your size and preparation

Extra large: a whole fish of about 2kg to 3kg, giving about 840g to 1.3kg filleted, serves 4 to 7. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.

  • Whole, gutted and trimmed: about 1.8kg to 2.7kg
  • Filleted, skin on: about 840g to 1.3kg
  • Filleted, skinned: about 760g to 1.1kg
  • Cut into steaks on the bone: about 1.4kg to 2.1kg

Season

Most readily available from May to September, with supplies hardest to find from December to February.

Storage and freezing

Keep it in its wrapping on a plate at the bottom of the fridge (0-5C) and cook within 1-2 days of delivery.

Freezes well if wrapped tightly on the day it arrives; use within 3 months and thaw overnight in the fridge.

Chef's tip

Cook it on the bone where you can: the bone keeps the delicate flesh moist and makes it easy to judge when it lifts away cleanly.
