These are warm-water prawns, sold frozen: raw tiger prawns with their striped shells, peeled raw king prawns ready to cook, and cooked crevettes in the shell. Freezing at source keeps them in good condition until you need them.
The meat is sweet and firm with a satisfying bite, and it takes on garlic, chilli and spices well. Prawns are quick, convenient and popular with almost everyone, so they work for weeknight cooking, starters and sharing platters alike.

How much to buy
150-200g of peeled prawns per person, or 250-300g of shell-on prawns per person.

Readily available all year round.
Storage
Arrives frozen: keep it in the freezer (-18C) and use by the date on the label. Thaw overnight in the fridge and cook within 24 hours. Do not refreeze once thawed.
Chef's tip
Cook raw prawns only until they turn pink and curl into a loose C; a tight O means they are overdone.
