Cuttlefish are relatives of squid and octopus, with a broad, flattened body, a frill of fin around the edge and a chalky internal shell, the cuttlebone. They live on sandy and weedy ground and are landed by Cornish boats, often in good numbers in spring.
The flesh is thick, white and sweet, firmer than squid, and it rewards either very quick cooking or long, slow simmering. The ink is prized too, for colouring and flavouring rice and pasta.

How much to buy
About 200-250g of cleaned cuttlefish per person as a main.
Season
Available right through the year, with the best quality in January.
Storage and freezing
Keep covered at the bottom of the fridge (0-5C) and cook within 1-2 days of delivery.
Freezes very well, and freezing can help tenderise it; wrap tightly, use within 3 months and thaw overnight in the fridge.
Chef's tip
Cook it for under two minutes over fierce heat or for over an hour at a gentle simmer; anything in between turns it rubbery.
