A kipper is a whole herring that has been split open along the back, lightly salted and cold smoked, giving it a golden copper colour. Herring are small, silvery, oily fish that move in large shoals, and kippers have been a British breakfast staple for generations.
The flesh is rich, smoky and savoury, with a soft texture. Kippers need only a short cooking time, and they are a quick, filling breakfast or supper that is also an easy way to eat more oily fish.

Season
Kippers are made from herring, which is available through the year.
Storage
Arrives frozen: keep it in the freezer (-18C) and use by the date on the label. Thaw overnight in the fridge and cook within 24 hours. Do not refreeze once thawed.
Chef's tip
For a kitchen that does not smell of kippers, jug them: stand them head down in a tall jug of just-boiled water for 5-6 minutes.
