Lemon sole is an oval flatfish with a small head and a smooth, speckled orange-brown skin, found on firm sea beds around the British coast. Despite the name it is not a true sole, and it has no lemon taste.

Its flesh is soft, delicate and mildly sweet, so it suits gentle, quick cooking. Lemon sole is a sensible choice for anyone who wants a light, approachable fish that cooks in minutes, and a whole fish makes a satisfying single serving with very little preparation.

Season

Available all year round, with the season running from May to March and best quality in January, February and June to September.

Storage and freezing

Keep covered in the coldest part of the fridge at 0-4°C and cook within 1-2 days.

Can be frozen on the day of delivery if wrapped well, though the delicate texture is at its best fresh; thaw in the fridge.

Chef's tip

Grill whole fish dark side up and do not turn them: the thin flesh cooks through from one side in a few minutes.
