Megrim is a slim, sandy-coloured flatfish with a large mouth and big eyes, found on soft ground in the deeper waters off the south-west. It is landed by Cornish boats and is sold here under the name Cornish sole.
The flesh is soft, white and mild, with a gentle sweetness. It is an easy, good value flatfish that suits quick cooking and takes well to butter, herbs and simple sauces.

Small: a whole fish of about 300g to 500g, giving about 130g to 210g filleted, serves 1. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.

Season
Easiest to buy from April to July, and hardest to find fresh from November to February.
Storage and freezing
Keep covered on a plate at the bottom of the fridge (0-5C) and cook within 1-2 days of delivery.
Can be frozen whole or as fillets on the day it arrives, well wrapped, for up to 3 months; thaw overnight in the fridge.
Chef's tip
The flesh is soft, so pat it dry and give it a light dusting of seasoned flour before frying to help it keep its shape.
