Monkfish is a bottom-dwelling fish with a huge head and wide mouth, so only the tail is usually sold. The tail has a single central bone and no small pin bones, which makes it easy to prepare.
The flesh is dense, firm and meaty, with a mild, sweet flavour often compared to lobster. It keeps its shape during cooking, so it is well suited to skewers, curries and roasting, and is a good fish for people who are wary of bones.

Medium: a whole fish of about 1kg to 2kg, giving about 550g to 1.1kg filleted, serves 3 to 6. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.

Season
Best availability runs from April to September and in December, with January the hardest month to buy it.
Storage and freezing
Keep covered in the coldest part of the fridge at 0-4°C and cook within 1-2 days.
Freezes well as tails or portions, tightly wrapped; thaw in the fridge and pat dry before cooking.
Chef's tip
Peel away the thin grey membrane before cooking, otherwise it shrinks and makes the tail curl and toughen.
