Porthilly oysters are rock oysters grown on the Camel estuary in North Cornwall, where oysters have been farmed commercially since the 1960s. They have deep, rough, frilled shells and are cleaned in purified water before sale.
The meat is plump and briny with a fresh, slightly sweet finish. Oysters are a simple luxury: most people eat them raw from the shell with lemon or a dressing, though they are also good grilled or baked with butter and breadcrumbs.

How much to buy
6 oysters per person as a starter, or 12 as a main.
Season
Pacific oysters are available and good to eat all year round.
Storage and freezing
Keep live oysters cup side down in the fridge at 2-4°C under a damp cloth, never in water or an airtight bag, and eat within 2-3 days.
Do not freeze live oysters in the shell; buy only what you will eat fresh.
Chef's tip
Discard any oyster that is open and will not close when tapped; hold the oyster in a folded tea towel when shucking.
Food safety
Raw shellfish is not recommended for pregnant women, young children, older people or anyone with a weakened immune system.
