Plaice is a flatfish easily spotted by the bright orange spots scattered over its brown upper side, with a creamy white underside. It feeds on the seabed over sand and gravel, and wild plaice is landed by Cornish boats, much of it from grounds off the north coast.

The flesh is white, soft and delicate, with a gentle sweetness that suits light cooking and simple flavours. Fillets cook in minutes, and a whole fish fits nicely under the grill, making plaice an easy, good-value choice for family meals and quick suppers.

Season

The Cornwall Good Seafood Guide marks plaice as best from April to December, avoiding the February and March spawning months.

Storage and freezing

Keep covered in the fridge at 0-4°C and cook within 1 to 2 days of delivery.

Can be frozen for up to 3 months, well wrapped; thaw in the fridge and pat dry before cooking.

Chef's tip

Fillets are thin, so cook them skin side down in a hot pan and turn only once, for barely a minute, to stop them breaking up.
