Turbot is a large, diamond-shaped flatfish that lies on sandy and gravelly sea beds, with a mottled brown upper side studded with small bony knobs instead of scales. Whole fish carry a thick band of gelatinous skin and bone that gives body to sauces and stocks.

The flesh is firm, white and meaty, with a clean, gently sweet flavour that holds up to bold cooking. Because it keeps its shape well, turbot is a favourite for special dinners, whether roasted on the bone for a table to share or served as neat fillet portions with a butter sauce.

How much to buy

About 400-500g of whole fish per person on the bone, or one 150-180g fillet portion per person.

Large: a whole fish of about 2kg to 3kg, giving about 840g to 1.3kg filleted, serves 4 to 7. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.

  • Whole, gutted and trimmed: about 1.8kg to 2.7kg
  • Filleted, skin on: about 840g to 1.3kg
  • Filleted, skinned: about 760g to 1.1kg
  • Cut into steaks on the bone: about 1.4kg to 2.1kg

Season

Available all year round, with the wild season running from April to February.

Storage and freezing

Keep in the coldest part of the fridge, covered, at 0-4°C and cook within 1-2 days of delivery.

Freezes well if wrapped tightly on the day of delivery; thaw slowly in the fridge overnight before cooking.

Chef's tip

Cook turbot on the bone where you can: the bone and skin keep the flesh moist and add flavour to the pan juices.
