Sea bass is a sleek, silver-scaled fish with a dark back and a white belly. This is wild bass, landed by Cornish boats.

The flesh is white and moist with large, firm flakes and a clean, slightly sweet taste. The skin crisps up beautifully in a hot pan or over coals, and wild fish is larger and firmer than farmed.

How much to buy

About 400-500g of whole fish per person on the bone, or 150-180g of fillet per person.

Small: a whole fish of about 500g to 1kg, giving about 230g to 450g filleted, serves 1 to 2. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.

  • Filleted, skin on: about 230g to 450g
  • Filleted and pin-boned, skin on: about 210g to 420g

Season

Farmed sea bass is available all year; for wild bass the Cornwall Good Seafood Guide marks June to November as best, and commercial and recreational bass fishing is closed in February and March.

Storage and freezing

Keep covered in the coldest part of the fridge at 0-4°C and cook within 1 to 2 days.

Freezes well for up to 3 months if tightly wrapped; thaw overnight in the fridge.

Chef's tip

Score the skin lightly and press fillets flat with a fish slice for the first 30 seconds so the skin crisps evenly without curling.
