Ray wings come from the flat, diamond-shaped rays that live on the sea bed around the British coast, with several types landed by Cornish boats. Only the wings are eaten: a fan of long strands of flesh running either side of a soft cartilage, with no small pin bones.

The meat is pale, sweet and slightly rich, and it slides off the cartilage in ribbons once cooked. People choose ray for its distinctive texture, how easy it is to eat, and the way it carries strong flavours such as capers and brown butter.

How much to buy

One 250-350g wing on the cartilage per person.

Season

At its best from June to November and again in January and February, with lower availability from March to May and in December.

Storage and freezing

Keep chilled at the bottom of the fridge (0-5C) and cook within 1-2 days; a faint smell of ammonia means it is past its best.

Freezes well, wrapped tightly, for up to 3 months; thaw overnight in the fridge before cooking.

Chef's tip

It is done when the flesh pulls away easily from the cartilage; scrape it off in strands with a fork to serve.
