Red mullet is a small, rosy-pink fish with two long barbels under its chin, which it uses to feel for food on the sea bed. It is a summer visitor to south-west waters, caught close to shore by Cornish netters.
The flesh is fine and delicate with a rich, savoury flavour that some compare to shellfish, and the liver is prized by many cooks. It needs very little cooking and suits Mediterranean flavours, so it is a favourite for quick grills and summer meals.

How much to buy
One or two whole fish per person, about 250-350g in total.

Large: a whole fish of about 500g to 1kg, giving about 230g to 450g filleted, serves 1 to 2. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.

Season
At its best from May to November, when it visits south-west coasts in the warmer months.
Storage and freezing
Keep very cold, covered, at 0-4°C and cook on the day of delivery or the next day, as quality drops quickly.
Best eaten fresh; if needed, freeze on the day of delivery, wrapped tightly, and thaw in the fridge.
Chef's tip
The scales are large and loose, so scrape them off gently under cold running water before cooking.
