Sardines are small, oily fish with blue-green backs and bright silver sides, swimming in large shoals. Cornish sardines, once known as pilchards, are caught by ring-net boats working close to the coast.

The flesh is rich, full-flavoured and soft, with natural oils that keep it moist under a fierce heat. Sardines are made for the grill or barbecue: cooked whole, they take only a few minutes and pair well with sharp, fresh flavours that cut through the richness.

How much to buy

3 to 4 whole sardines per person as a main, 1 to 2 as a starter.

Season

The Cornwall Good Seafood Guide says the main sardine season runs from August to January, though they are sometimes caught outside that period.

Storage and freezing

Keep covered in the coldest part of the fridge at 0-4°C and cook within 24 hours, as oily fish is best very fresh.

Can be frozen for up to 2 months, well wrapped; oily fish loses quality faster in the freezer than white fish.

Chef's tip

Brush the fish and the grill bars with oil and leave them alone for the first couple of minutes, so the skin releases cleanly.
