Salmon is a large silver fish with a pink to deep orange flesh, and the salmon sold in Britain today is almost all farmed Atlantic salmon. Its high oil content gives it a rich taste and keeps it moist during cooking.
The flesh has a buttery flavour and soft, large flakes, and it suits a very wide range of cooking. Salmon is a dependable choice for family meals and for catering, as it is easy to portion, popular with most diners and works hot or cold.

Storage and freezing
Keep covered in the coldest part of the fridge at 0-4°C and cook within 1-2 days.
Freezes well as portions or sides if wrapped tightly; thaw in the fridge overnight.
Chef's tip
Start skin side down in a hot pan and cook it mostly on that side; turn only for the last minute.
