This trout is a farmed fish raised in the cool, clear, fast-flowing water of English chalk streams. It has a silvery skin with fine dark spots and a pink-tinged flesh.
The flavour is clean and gentle, a little richer than white fish but lighter than salmon, and the flesh is tender with a fine flake. Trout cooks quickly, is easy to portion and makes a good alternative to salmon for anyone who wants something less oily.

How much to buy
About 250g of whole fish per person on the bone, so a 2kg fish serves about 8, or a 150-180g fillet per person.

Whole fish: a whole fish of about 2kg to 2.5kg, giving about 1kg to 1.3kg filleted, serves 5 to 7. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.
- Whole, gutted and scaled: about 1.8kg to 2.3kg
- Filleted, skin on: about 1kg to 1.3kg
- Cut into steaks: about 1.4kg to 1.8kg
Season
As a farmed fish it is available all year round.
Storage and freezing
Keep covered at the bottom of the fridge (0-5C) and cook within 1-2 days of delivery.
Freezes well, tightly wrapped, for up to 3 months; thaw overnight in the fridge.
Chef's tip
Press the fillet flat with a spatula for the first few seconds in the pan so the skin stays in contact and crisps evenly.
