Cod is the classic British white fish: a large, olive-speckled fish with a pale lateral line, living in the cooler waters of the North Atlantic.
The fillet is white and mild, with large, moist flakes that separate cleanly when cooked. Its gentle flavour makes it easy to please a crowd, and it works across almost every method, from battering and frying to roasting and fish pie.

Storage and freezing
Keep covered at the bottom of the fridge (0-5C) and cook within 1-2 days of delivery.
Freezes well, wrapped tightly, for up to 3 months; thaw overnight in the fridge and pat dry before cooking.
Chef's tip
Salt the fillet lightly 15 minutes before cooking and pat it dry; the flakes firm up and hold together better in the pan.
