Gurnard is an unusual-looking fish with a large, bony, armoured head, a tapering body and fins that it uses to 'walk' along the seabed. Red gurnard has a rosy pink skin. Once regarded as a bycatch, wild gurnard landed by Cornish boats is now a popular choice with chefs.

The flesh is white, firm and holds together well, with a sweet, mild flavour that stands up to strong seasonings. Because it does not fall apart, gurnard is a good fish for stews and curries, and the bones make a fine stock.

How much to buy

One 300-400g whole fish, or 150-180g of fillet, per person.

Small: a whole fish of about 400g to 1kg, giving about 180g to 450g filleted, serves 1 to 2. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.

  • Whole, gutted and scaled: about 360g to 900g
  • Filleted, skin on: about 180g to 450g
  • Filleted and pin-boned, skin on: about 170g to 420g

Season

The Cornwall Good Seafood Guide marks gurnard as best from August to March, and advises avoiding it during the April to August spawning season.

Storage and freezing

Keep covered in the fridge at 0-4°C and cook within 1 to 2 days.

Freezes well for up to 3 months, well wrapped; thaw in the fridge before cooking.

Chef's tip

Watch out for the sharp spines on the head and fins when handling a whole fish, and keep the head for stock.
