Haddock is a member of the cod family with grey-brown skin, a dark line running along its side and a distinctive dark thumbprint mark above the pectoral fin. It lives in cool waters close to the seabed and is a long-standing favourite in British kitchens.

The flesh is white with a fine, tender flake and a slightly sweeter taste than cod. It is a dependable all-rounder: crisp in batter, good in a fish pie and quick to bake or poach for a light supper.

Season

The Cornwall Good Seafood Guide marks haddock as best from May through to January, and advises avoiding it during the March and April breeding season.

Storage and freezing

Keep covered in the fridge at 0-4°C and cook within 1 to 2 days.

Freezes well for up to 3 months, tightly wrapped; thaw in the fridge before cooking.

Chef's tip

For a crisp batter, dry the fillets well and dust them in flour before dipping, so the batter clings.
