Pollack is a member of the cod family with a greenish-bronze back, a pale belly and a jutting lower jaw. It lives around wrecks and rocky reefs, and ours is line caught by Cornish boats.

The flesh is white and moist with a mild, slightly sweet flavour and large, soft flakes. It cooks in much the same way as cod or haddock, so it is a practical, versatile choice for anything from battered fish to pies and stews.

How much to buy

150-180g of fillet per person.

Your size and preparation

Large: a whole fish of about 4kg to 5kg, giving about 1.8kg to 2.3kg filleted, serves 10 to 13. Choose how you want it: we prepare it for you at no extra cost, and the price is for the whole fish.

  • Whole, gutted and scaled: about 3.6kg to 4.5kg
  • Filleted, skin on: about 1.8kg to 2.3kg
  • Filleted and pin-boned, skin on: about 1.7kg to 2.1kg

Season

Best eaten from May through to January, as it spawns between January and April.

Storage and freezing

Keep covered in the coldest part of the fridge at 0-4°C and cook within 1-2 days.

Freezes well as fillets wrapped tightly on the day of delivery; thaw in the fridge overnight.

Chef's tip

Salt the fillets lightly 15 minutes before cooking and pat dry; it firms the soft flesh so it holds together.
